Tira Mi Su(Translation Pick-Me-Up)
- 4 beaten eggs
- 3/4 c. sugar
- 2/3 c. skim milk
- 2 - 8 oz. packages softened light cream cheese
- 2 1/2 c. fat free cool whip
- 1 t. vanilla
- 2 - 3 oz. pkgs. ladyfingers cookies
- 1/4 c. cold very strong coffee
- 1 t. rum extract
- 1 T. baking cocoa
- Beat first 3 ingredients in saucepan over medium heat to the boiling point.
- Boil and stir for 1 minute, and then remove form heat.
- Place plastic wrap directly onto egg mixture and chill for one hour.
- Meanwhile, mix vanilla with cool whip.
- Set aside. Separate ladyfingers horizontally in half.
- Drizzle with a mixture of the coffee and rum extract.
- Arrange half of the ladyfingers in a well greased serving dish.
- Set aside.
- Remove egg mixture from refrigerator and beat in softened cream cheese with a wire whisk until smooth.
- Pour half of this mixture on layer of ladyfingers. Top with half of the cool whip mixture, and then repeat layers. Sprinkle top of dessert with cocoa.
- Chill for 4 hours.
