Mushroom Casserole
- 8 oz. fresh, sliced mushrooms
- 1/4 c. chopped onions
- 1/4 c. chopped celery
- 1/4 c. chopped red and green pepper
- 2 Tbsp. oleo
- 1/4 c. mayonnaise
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 slightly beaten egg
- 3/4 c. milk
- 1/2 c. cream of mushroom soup
- 4 slices bread, crumbled
- 1/4 c. Cheddar cheese, shredded
- 2 Tbsp. melted oleo
- Saute the first 4 ingredients in 2 tablespoons of oleo. Mix together
- mayonnaise,
- salt,
- pepper, egg, milk and soup. Combine this
- mixture
- with mushroom mixture.
- Combine bread, shredded cheese and melted oleo in a separate bowl.
- In bottom of a
- 1 quart
- casserole, spread layer of onions and layer of mushrooms. Repeat
- until
- mushrooms left on top.
- Cook for 40 minutes, uncovered, at 400u0b0.
- Serves 4.
