Almond Biscotti
- 3 oz. semi-sweet chocolate
- 1 3/4 c. flour
- 2/3 c. granulated sugar
- 1 1/4 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. almond paste
- 3 Tbsp. chilled butter, cut in 1/2-inch cubes
- 2 eggs plus 1 yolk
- 1 Tbsp. vanilla
- 1 c. roasted almonds, shelled
- 1 c. hazelnuts or pistachio nuts
- orange rind, white chocolate chips (optional)
- Butter and flour cookie sheet.
- Chop chocolate.
- Combine flour, sugar, baking powder and salt.
- Add almond paste and butter (don't overmix).
- Add almonds, nuts and chopped chocolate.
- Mix eggs (save 2 tablespoons).
- Add vanilla to eggs, then add to previous mixture in a "well" in center of dry mix.
- Form into a ball.
