Creamy Potatoes And Broccoli
- 1 lb. new potatoes, sliced
- 2 c. fresh broccoli flowerets
- 4 small mushrooms, sliced
- 2 Tbsp. butter or margarine
- 2 Tbsp. all-purpose flour
- 3/4 c. milk
- 1/3 c. sour cream
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. celery salt
- 3 slices bacon, cooked and crumbled
- Arrange potatoes in a vegetable steamer over boiling water. Cover and steam 5 minutes; add broccoli, cover and steam 6 minutes.
- Add mushrooms; cover and steam 3 minutes.
- Remove the steamer from heat and uncover.
- Melt butter in heavy saucepan over low heat; add flour, stirring until smooth.
- Cook 1 minute, stirring constantly.
- Gradually add milk; cook over medium heat, stirring constantly until mixture is thickened and bubbly.
- Stir in sour cream, salt, pepper and celery salt.
- Combine vegetables and sauce, stirring to coat.
- Sprinkle with crumbled bacon.
- Serve immediately.
- Yields 4 to 6 servings.
