Microwave Stuffed Manicotti
- 1 1/2 to 2 lb. lean ground beef
- 1 onion, chopped
- 1 clove garlic, diced
- 1/2 tsp. dill
- 1/2 tsp. parsley
- 3 c. Ricotta cheese
- 1/2 c. Parmesan cheese, grated
- 2 eggs
- 1 pkg. chopped spinach
- 1 qt. spaghetti sauce
- 2 c. Mozzarella cheese
- 1 (5 oz.) manicotti noodles, cooked
- Microwave on High for 6 to 8 minutes the beef, onion and garlic.
- Stir 1 time.
- Drain and set aside.
- Microwave on High for 6 minutes the spinach.
- Drain well.
- Combine beef, spinach, dill, parsley, eggs and cheeses.
- Stuff shells.
- Spread on bottom of 12 x 8-inch casserole with 1 cup sauce.
- Arrange stuffed noodles in dish.
- Sprinkle with Mozzarella cheese.
- Pour remaining sauce. Cover with wax paper and microwave on High for 12 to 15 minutes. Cool 10 minutes.
