Creamy Cauliflower Or Broccoli Soup
- 1 medium head cauliflower or 1 bunch broccoli
- 1/4 c. chopped onions
- 4 Tbsp. butter
- 1/4 c. flour
- 3 c. chicken broth
- 2 c. milk
- 1 tsp. Worcestershire sauce
- 1 c. diced real American cheese
- snipped chives or green onion tops (optional)
- Cook cauliflower or broccoli, covered, in small amount of boiling salted water about 10 minutes or until tender.
- Drain and chop into coarse pieces.
- Set aside.
- Cook onions in butter until tender.
- Blend in the flour.
- Stir in broth, milk and the Worcestershire sauce.
- Cook and stir until mixture thickens slightly.
- Add cooked vegetable.
- Bring to a boil; stir in cheese until it melts.
- Garnish with snipped chives or onion tops.
