Sue'S Blueberry Delight
- 1 1/2 c. Bisquick
- 1/2 stick butter or oleo
- 1 c. sugar
- 1 c. or more pecans
- 2 c. water
- 4 c. blueberries, drained
- 1 large can crushed pineapple, drained
- 1 large Cool Whip topping
- 1 (8 oz.) cream cheese
- 2 Tbsp. cornstarch
- Mix with spoon Bisquick, soft butter, 1/2 cup sugar and stir until crumbly; add pecans.
- Put into pan, smooth out and press down.
- Do not need to grease pan.
- Bake at 350u0b0 until lightly brown.
- Drain berries.
- Mix in saucepan 1/2 cup sugar and cornstarch.
- Stir and add water gradually, stirring over medium heat until it comes to a boil.
- As it thickens, add blueberries and boil for one minute, stirring constantly.
- Set aside until cool; should be a little thick.
- Whip cream cheese and Cool Whip together with mixer until smooth.
- Drain pineapple and spread layer of pineapple on top of crust; next put 1/2 of cream cheese topping and then all of blueberry topping.
- Add rest of cream cheese topping and pecans on top, if desired.
- Keep refrigerated.
