Low Carb Cheeseburger Quiche Lunch Snacks
- 1 lb. lean hamburger (85% or better)
- 1 small onion, diced
- 4 slices crisp-cooked bacon, chopped
- 3 medium eggs
- 1/2 c. whole mayonnaise
- 1/2 c. half and half or heavy cream
- 8 oz. shredded Cheddar
- 1/4 tsp. minced garlic
- 1/4 tsp. fresh ground black or to taste
- salt to taste (careful the bacon has salt)
- Preheat oven to 350u0b0.
- Brown hamburger in a heavy skillet; add onion.
- Remove and mix in bowl with bacon pieces, breaking up any larger clumps with a fork or pastry mixer until you have a fine mix.
- Drain well of any excess grease and press into the bottom of a deep-dish pie pan.
- Set aside.
- Combine remaining ingredients in mixer bowl and whip well.
- Pour mixture over beef "crust" and bake 40 to 45 minutes until top is browned and "set".
- Cool for 15 to 20 minutes to slice.
- This can be packaged in Ziploc or plastic containers for meals quickly microwaved over the next 3 to 5 days. (Does not freeze well, though.)
- Makes 6 servings.
