Almond-Orzo Kugel
- 1 (16-ounce) package uncooked orzo (rice-shaped pasta)
- 1 cup sugar, divided
- 1 1/2 cups reduced-fat sour cream
- 1/2 cup fat-free milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/4 teaspoon almond extract
- 1/8 teaspoon grated whole nutmeg
- 2 large egg whites
- 1 (24-ounce) carton 1% low-fat cottage cheese
- 1 (8-ounce) carton egg substitute
- Cooking spray
- 1/3 cup sliced almonds
- 1/4 cup all-purpose flour (about 1 ounce)
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 2 tablespoons butter, melted
- Preheat oven to 325u0b0.
- Cook orzo according to package directions, omitting salt and fat. Drain and set aside.
- Combine 3/4 cup sugar and the next 9 ingredients (through egg substitute) in a food processor; process until smooth. Combine cooked pasta and cottage cheese mixture in a large bowl, stirring until well blended. Spoon orzo mixture into a 13 x 9-inch baking dish coated with cooking spray. Bake at 325u0b0 for 40 minutes.
- Combine remaining 1/4 cup sugar, sliced almonds, and next 3 ingredients (through 1/8 teaspoon salt) in a small bowl; stir in butter. Sprinkle kugel with almond mixture; bake an additional 20 minutes. Cool 15 minutes; cut into 16 pieces. Serve warm.
