Scottish Bachelor'S Almost Scones
- 2 1/2 c. Pillsbury's Best all-purpose flour
- 2 1/2 c. rolled oats (not instant)
- 2 c. yellow raisins
- 1 tsp. cinnamon
- 1 tsp. cream of tartar
- 2 tsp. baking soda
- 1/2 tsp. nutmeg
- 4 Tbsp. honey
- 4 oz. no cholesterol margarine
- 1 1/2 c. skim milk
- 4 egg whites or 2 egg substitutes
- 2 Tbsp. treacle (molasses)
- Preheat oven to 375u0b0.
- Mix dry ingredients.
- Chop up margarine in as small pieces as your patience will allow.
- Attempt to mix evenly into dry ingredients.
- Mix egg whites, honey, milk and treacle.
- Pour into other ingredients.
- Beat ingredients with a heavy spoon until you get tired of it.
- (If it looks too thin, add some more oats.
- If too thick, add milk.)
- Spoon into greased muffin tins (they run all over cookie sheets!).
- Bake until toothpick comes out clean, 15 to 20 minutes.
- Serve hot with margarine.
- They will be a bit chewy.
- They freeze okay and microwave hot again.
- Makes about 24 large scones.
- Enjoy.
