Pork Chops Pizzaiole
- 4 pork chops
- 2 large potatoes
- oregano and basil
- Pecorino Romano cheese, grated, to taste
- olive oil
- black pepper and salt
- 1 (8 oz.) can tomato sauce
- garlic powder
- Depending on how many pork chops, choose size pot with tight cover.
- Grease bottom lightly with olive oil.
- Cover with a sprinkle of tomato sauce.
- Place a layer of pork chops; cover with thin layer of tomato sauce.
- Sprinkle with garlic powder, oregano, cheese, basil, salt and pepper.
- Place a full layer of thickly sliced potatoes (sliced across whole width of potato, not length) on top of pork chops.
- Sprinkle with garlic powder, oregano, cheese, basil, salt and pepper and tomato sauce.
- Continue procedure until you have all pork chops and potatoes in pot. Cover tightly; simmer until pork chops and potatoes are tender to the touch.
- Serves 2.
