Fried Rice

  1. Steam rice, 2 cups water and 1 tablespoon oil in covered saucepan or rice cooker about 20 minutes.
  2. Remove from heat and let stand another 20 minutes.
  3. In small amount of oil in wok or skillet, saute chicken until done.
  4. Remove from wok.
  5. In wok, steam carrot, celery and onion pieces in 1/2 cup water until tender and water is absorbed.
  6. Add peas and a little oil and saute a couple of minutes.
  7. Remove all ingredients from wok.
  8. Warm 1/4 cup oil in wok and dump in rice.
  9. Stir and add soy sauce.
  10. Add in previously cooked chicken and veggies.
  11. Green part of onion may be reserved uncooked for garnish.
