Toaster Waffles With Lemon-Ginger Berry Sauce And Sweet Yogurt
- 1 (12-ounce) carton plain 2% reduced-fat Greek yogurt
- 6 tablespoons sugar, divided
- 1 tablespoon vanilla extract, divided
- 4 cups frozen unsweetened mixed berries
- 1/4 cup water
- 2 teaspoons cornstarch
- 2 teaspoons grated peeled fresh ginger
- 1/2 teaspoon grated lemon rind
- 8 frozen gluten-free waffles
- Combine yogurt, 1/4 cup sugar, and 2 teaspoons vanilla, stirring with a whisk. Set aside.
- Combine berries and remaining 2 tablespoons sugar in a medium saucepan. Bring to a boil over medium heat, stirring constantly. Combine 1/4 cup water and cornstarch in a small bowl, stirring until smooth; stir into berry mixture. Cook 1 minute or until thickened. Remove from heat; stir in remaining 1 teaspoon vanilla, ginger, and lemon rind. Cover and keep warm.
- Toast waffles according to package directions. Serve waffles with berry sauce and yogurt mixture.
