Creole Tomato Sauce
- 1 bunch green onions, sliced
- 1 medium onion, chopped
- 1 small red bell pepper, diced
- 2 ribs celery, diced
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1/2 cup chopped fresh parsley
- 1 1/2 teaspoons chili powder
- 1 teaspoon lemon zest
- 1 (28-ounce) can crushed tomatoes
- 1 cup dry red wine
- 2 tablespoons capers, drained
- 1/2 cup pimiento-stuffed green olives, sliced
- 1/4 teaspoon sea salt
- 1/2 teaspoon freshly ground pepper
- Saute first 4 ingredients in hot olive oil in a large skillet over medium heat 5 minutes or until tender. Add garlic through lemon zest, and saute 2 minutes.
- Add remaining ingredients. Bring mixture to a boil, stirring occasionally, for 30 to 40 minutes or until mixture thickens.
