Frosted Daiquiri Pie
- baked 9-inch pie shell
- 1 envelope unflavored gelatin
- 2/3 c. granulated sugar
- 1/2 tsp. salt
- 3 egg yolks
- 1/4 c. cold water
- 1/2 c. fresh or canned lime juice
- 1 tsp. grated lime or lemon rind
- green food coloring
- 1/3 c. light rum
- 3 egg whites
- 1/3 c. granulated sugar
- 1/2 c. heavy cream, whipped
- In double boiler top pan, combine gelatin with 2/3 cup sugar and salt; add egg yolks, water and lime juice and beat until blended.
- Cook over boiling water, stirring, until the mixture coats a spoon.
- Remove from heat.
- Tint pale green with food color.
- When the mixture is cool, stir in the rum.
- Refrigerate until the mixture is slightly thicker than unbeaten egg whites.
