Peanut Butter Banana Squares
- 1 c. plus 2 Tbsp. flour
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 c. peanut butter
- 1/3 c. softened butter or margarine
- 1/2 c. brown sugar
- 1/2 c. sugar
- 2 large eggs
- 1 small ripe banana, mashed
- 1 tsp. vanilla
- 1 c. walnut pieces
- 1 (6 oz.) pkg. semi-sweet chocolate chips
- powdered sugar (optional)
- Preheat oven to 350u0b0.
- Butter an 8 or 9-inch square pan.
- In small bowl, mix the flour, baking soda and salt.
- Set aside.
- In large bowl at medium speed, beat peanut butter and butter until well blended.
- Gradually beat in brown sugar and sugar until light and fluffy.
- Add eggs, one at a time; beat well after each addition.
- Beat in banana and vanilla.
- Add dry ingredients; beat just until blended.
- Stir in nuts and chips.
- Spread in baking pan.
- Bake for 35 to 40 minutes, until cake pulls away from pan. Cool on wire rack; cut into squares.
- Cover with plastic wrap. Serve the next day.
- Sprinkle with powdered sugar.
- Makes about 16 (2-inch) squares.
