Quick Upside-Down Cake
- 2 Tbsp. butter or margarine
- 1/4 c. firmly packed brown sugar
- 1/8 tsp. ground cinnamon
- 1 (8 oz.) can pineapple slices, drained
- 2 Tbsp. chopped pecans
- 7 maraschino cherries
- 1 (9 oz.) pkg. yellow cake mix
- 1/2 tsp. vanilla extract
- Grease sides of an an 8-inch cast-iron skillet.
- Melt butter in skillet; sprinkle with brown sugar and cinnamon.
- Cut 3 pineapple slices in half; arrange whole slices in center of brown sugar mixture and place half slices around it.
- Arrange pecans and cherries over the top.
- Set skillet aside.
- Prepare cake mix according to package directions and stir in vanilla.
- Spoon batter into skillet over pineapple slices.
- Bake at 350u0b0 for 30 to 35 minutes or until done.
- Immediately invert cake onto serving plate.
