Quick Upside-Down Cake

  1. Grease sides of an an 8-inch cast-iron skillet.
  2. Melt butter in skillet; sprinkle with brown sugar and cinnamon.
  3. Cut 3 pineapple slices in half; arrange whole slices in center of brown sugar mixture and place half slices around it.
  4. Arrange pecans and cherries over the top.
  5. Set skillet aside.
  6. Prepare cake mix according to package directions and stir in vanilla.
  7. Spoon batter into skillet over pineapple slices.
  8. Bake at 350u0b0 for 30 to 35 minutes or until done.
  9. Immediately invert cake onto serving plate.
