Coffee Cake
- 1/4 c. vegetable shortening
- 1/2 c. sugar
- 1 egg, beaten
- 1/2 c. skim milk
- 1 1/2 c. flour, sifted
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 fresh apples, sliced
- 1 tsp. cinnamon
- 1 tsp. sugar substitute
- Cream shortening and sugar.
- Blend in egg; add milk.
- Sift dry ingredients together and blend into first ingredients.
- Spread batter in greased 9-inch pan.
- Arrange apple slices on top of batter, pressing them slightly into the batter.
- Combine sugar substitute and cinnamon and sprinkle on top.
- Bake at 375u0b0 for 25 to 35 minutes.
- Yield: 16 (2 inch) squares.
- Carbohydrate 23 g, protein 2 g, fat 4 g, calories 136.
- One square = 1 bread starch exchange, 1 fat exchange, 1 fruit exchange.
