King Ranch Chicken No. 1
- 1 chicken, chipped
- 1 large onion
- 1 large green pepper
- 1 pkg. corn tortillas
- 1/2 lb. Cheddar cheese
- 1 1/2 tsp. chili powder
- 1/2 tsp. garlic salt
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 c. Ro-Tel tomatoes or green chilies
- 1/2 c. chicken broth
- Butter casserole dish.
- Combine chicken, onion and green pepper.
- Place 4 tortillas, which have been dipped in chicken broth, in bottom of a 9 x 13-inch pan.
- Cover with chicken mixture.
- Combine seasonings, soups and tomatoes and pour over chicken mixture.
- Top with 6 tortillas.
- Spread grated cheese on top of tortillas.
- Pour chicken broth on top.
- Bake at 350u0b0 for 45 minutes.
- Yields 12 servings.
