Picante Black Bean Soup(Makes 6 To 8 Servings)
- 4 slices bacon, diced
- 1 large onion, chopped
- 1 clove garlic, minced
- 2 (15 oz. each) cans black beans, undrained
- 1 (about 14 oz.) can beef broth
- 1 1/4 c. water
- 3/4 c. Pace picante sauce
- 1/2 to 1 tsp. salt
- 1/2 tsp. oregano leaves, crushed
- sour cream
- additional Pace picante sauce and crackers
- Cook bacon over medium-high heat in large saucepan until crisp. Remove to paper towels.
- Set aside. Add onion and garlic to drippings; cook and stir 3 minutes. Add beans, broth, water, 3/4 cup picante sauce, salt and oregano.
- Cover and simmer 20 minutes. Ladle into soup bowls; dollop with sour cream. Sprinkle with reserved bacon. Serve with additional picante sauce and crackers.
