Raisin Loaf
- 1/3 c. shortening
- 3/4 c. sugar
- 2 tsp. mandarin peel, chopped
- 1/3 c. mandarin juice
- 1 c. chopped walnuts
- 1/2 c. chopped raisins
- 3 1/2 tsp. baking powder
- 1 1/2 tsp. salt
- 1 c. milk
- 1 egg
- 3 c. flour
- Mandarin Glaze
- Cream shortening and sugar, add mandarin peel and egg, beat until light and fluffy.
- Mix flour, baking powder, and salt.
- Blend into creamed mixture alternately with milk and mandarin juice. Stir in walnuts and raisins.
- Turn into greased 9 x 5 x 3-inch loaf pan.
- Let stand 20 minutes.
- Bake in 350u0b0 oven for 1 hour 10 minutes.
- Let stand 10 minutes, then turn out onto wire rack to cool.
- When loaf is still slightly warm, spoon Mandarin Glaze over top.
