Macaroni Salad
- 2 c. dry macaroni
- 1 (17 oz.) can sweet peas
- 1 c. chopped ham
- 2 Tbsp. vinegar
- 2 Tbsp. salad oil
- 1 Tbsp. minced onion
- 2 Tbsp. minced parsley
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 c. Cheddar cheese
- 1 c. celery
- 1/4 c. sweet pickles
- 1/2 c. pimentos, cut fine
- 1/2 c. carrots
- 1/2 c. sweet pepper
- 1/2 c. or more mayonnaise
- While cooking macaroni, dice all vegetables and cheese.
- Also drain the can of peas.
- After macaroni is cooked, drain (do not chill).
- While hot, drizzle with oil and vinegar.
- Add onion, seasonings and cheese.
- Toss well.
- Gently mix in ham and remaining ingredients.
- Chill.
