Nita'S Pasta Smothered With Onions

  1. In covered saucepan, cook onions and garlic in butter and olive oil over low heat, about 20 minutes or until very tender, stirring occasionally.
  2. Uncover and cook over medium-high heat, about 10 minutes or until onions are a deep, golden color, stirring frequently.
  3. Stir in chicken broth and pepper.
  4. Boil gently, uncovered, for 5 to 10 minutes, stirring frequently.
  5. Stir in cheese and parsley.
  6. Toss onion mixture with pasta until coated.
  7. Serve immediately.
  8. Pass additional shredded Mozzarella over the top.
  9. Serves 6.
