Nita'S Pasta Smothered With Onions
- 2 large purple onions, cut into thin wedges
- 1 clove garlic, minced (optional)
- 2 Tbsp. butter or margarine
- 1 Tbsp. olive oil or cooking oil
- 1/2 c. chicken broth
- 1/8 tsp. pepper
- 1/4 to 1/2 c. Cheddar cheese
- 1/4 to 1/2 c. Mozzarella
- 1/2 c. snipped parsley
- 8 oz. hot, cooked pasta
- In covered saucepan, cook onions and garlic in butter and olive oil over low heat, about 20 minutes or until very tender, stirring occasionally.
- Uncover and cook over medium-high heat, about 10 minutes or until onions are a deep, golden color, stirring frequently.
- Stir in chicken broth and pepper.
- Boil gently, uncovered, for 5 to 10 minutes, stirring frequently.
- Stir in cheese and parsley.
- Toss onion mixture with pasta until coated.
- Serve immediately.
- Pass additional shredded Mozzarella over the top.
- Serves 6.
