Checkerboard Cheese Bake

  1. Trim and thinly slice summer squash.
  2. Saute in 2 tablespoons butter.
  3. Set aside.
  4. Tear spinach into bite-sized pieces and saute in 2 tablespoons butter.
  5. Set aside.
  6. Saute tomatoes in 2 tablespoons butter.
  7. Set aside.
  8. Combine cottage cheese, crackers and herbs in a small bowl.
  9. Put squash into a 2 quart baking dish. Add 1/2 cheese mixture, all of the spinach, remaining cheese mixture and tomato slices.
  10. Top with Provolone cheese arranged in a checkerboard fashion.
  11. Bake at 375u0b0 for 30 minutes.
