Crispy Roasted Pork Belly

  1. Preheat oven to 325u0b0. Make 1/4-inch-deep cuts in fattiest side of pork. Sprinkle pork with salt and pepper. Place in a large roasting pan. Place onion and next 5 ingredients around pork. Pour broth in pan, and cover tightly with aluminum foil.
  2. Bake at 325u0b0 for 3 to 3 1/2 hours or until fork-tender. Remove pork from pan, and let stand 15 minutes. Discard vegetables and liquid in pan.
  3. Cook pork in a large cast-iron skillet over medium-low heat 8 to 10 minutes on each side or until browned and crisp.
