Collard Green Slaw With Anchovies
- 1 shallot, minced
- 2 tablespoons sugar
- 1 teaspoon lemon zest
- 1/4 teaspoon crushed red pepper
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup rice vinegar or cider vinegar
- 1/4 cup fresh lemon juice
- 1/4 cup extra virgin olive oil
- 2 tablespoons fish sauce
- 1 1/2 pounds collard greens, tough stems removed and cut into julienne strips
- 8 white anchovies or anchovies
- 1/2 cup shaved Parmesan cheese
- Combine first 10 ingredients in a small bowl, whisking until sugar dissolves. Pour over collard greens, tossing until coated.
- Toss collard greens with anchovies and Parmesan; let stand 30 minutes.
