Apple Bran Walnut Muffins

  1. Preheat oven to 400u0b0.
  2. Grease 12 (1/2-cup) muffin tins.
  3. Mix first 5 ingredients in large bowl.
  4. Whisk buttermilk, oil and eggs in small bowl.
  5. Add to dry ingredients and stir until just blended. Let stand 15 minutes at room temperature.
  6. (Batter can be prepared 2 days ahead and refrigerated.)
  7. Mix remaining ingredients in small bowl.
  8. Spoon 2 tablespoons of batter into prepared tins.
  9. Cover evenly with apple mixture.
  10. Spoon remaining batter into tins.
  11. Bake until tester comes out clean, about 23 minutes.
  12. Cool on rack at least 3 minutes.
  13. Muffins may be kept, wrapped in foil and frozen, for up to 2 months.
  14. Rewarm in oven before serving.
