Ginger Spice Cake
- 1/2 cup granulated sugar
- 1/4 cup butter, softened
- 1/2 cup maple syrup
- 1/3 cup orange juice
- 1 large egg
- 2 teaspoons grated orange zest
- 1 1/2 cups all-purpose flour
- 2 teaspoons ground ginger
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- Cooking spray
- Preheat oven to 375u0b0.
- With an electric mixer, beat sugar and butter on medium until well blended. Add syrup, juice, egg, and zest; beat well, and set aside.
- Combine flour, ginger, baking powder, baking soda, cinnamon, and salt in a bowl; add the dry mixture to the syrup mixture, stirring until well blended.
- Pour batter into 8-inch square baking pan coated with cooking spray. Bake at 375u0b0 for 30 minutes or until a wooden toothpick comes out clean from center. Cool cake in pan on a wire rack.
