Fiesta Roll-Ups
- 1 (15 oz.) can black beans, drained
- 8 oz. cream cheese, softened
- 1 c. sour cream
- 1/2 tsp. seasoned salt
- 1/2 tsp. garlic salt
- 1 c. shredded monterey jack cheese
- 1/4 c. finely chopped red onion
- 1/4 c. chopped pimento stuffed green olives
- 5 (10 inch) flour tortillas
- Combine the black beans, cream cheese, sour cream, seasoned salt and garlic salt in large bowl.
- Beat at medium speed until blended scraping the bowl occasionally.
- Stir in the monterey jack cheese, red onion and green olives.
- Spread the bean mixture over 1 side of each of the tortillas; roll to enclose the filling. Chill, tightly wrapped in plastic wrap for 2 hours.
- Cut into 3/4 in slices just before serving.
