Waffle Cookies
- BATTER:
- 4 (1-oz.) squares unsweetened baking chocolate
- 1 cup butter or margarine
- 1 1/2 cups sugar
- 4 eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- CHOCOLATE FROSTING:
- 2 (1-oz.) squares unsweetened baking chocolate
- 1/4 cup butter or margarine
- 1/4 cup milk
- 2 teaspoons vanilla extract
- 3 cups powdered sugar, sifted
- Melt together chocolate and butter in a heavy saucepan over low heat; stir in sugar until dissolved. Remove from heat and whisk in eggs, vanilla and flour until blended. Drop by teaspoonfuls onto a heated waffle iron; bake according to manufacturer's instructions. Top with Chocolate Frosting.
- Melt chocolate and butter in a heavy saucepan over low heat; remove from heat and add milk and vanilla. Mix in powdered sugar to desired consistency.
