Cold Pasta Salad
- 6 c. (1 box) rotini (screws; better using multi-colored), cooked and drained
- 3/4 c. olive oil
- 1/2 c. red wine vinegar
- 1/4 c. sugar
- 1 Tbsp. dried oregano
- 1/2 tsp. ground black pepper
- 1 can drained and rinsed chickpeas
- 2 c. chopped green peppers
- 2 c. chopped fresh tomatoes
- 1 1/2 c. chopped onion
- 3/4 c. cubed Provolone cheese
- 1/2 lb. sliced hard salami
- 1/2 lb. pepperoni, cut into 1/2 strips
- 1 can pitted black olives
- 1 can chopped anchovy filets
- Cook pasta. In small bowl, whisk together oil, vinegar, sugar and seasoning. In large serving bowl, combine pasta, dressing and remaining ingredients. Cover and refrigerate.
