Simple French Onion Soup
- 4 medium yellow onions, chopped
- 3 Tbsp. butter
- 1 Tbsp. flour
- 5 c. stock or water
- salt and pepper
- 1 bay leaf
- 1 to 2 dinner rolls, sliced or 2 slices dry white bread, cut into 4 pieces
- 1/2 c. Gruyere or sharp Cheddar cheese, grated
- 2 cucumbers, seeded and julienned
- 1 small mild onion, minced
- 32 oz. yogurt (plain; nonfat or whole milk, either will work)
- 1 tsp. salt
- 1/2 tsp. sugar
- 1/4 tsp. crushed red pepper (optional)
- 1/4 tsp. crushed black pepper
- Beat yogurt with a fork until smooth.
- Add salt, sugar, red pepper and black pepper.
- Mix well.
- Add cucumber and onions; mix. Serve well chilled or at room temperature as desired.
