Jim'S Mother'S Chicken And Rice Casserole
- chicken (skinless)
- vegetable oil
- margarine
- 1/4 c. celery, chopped
- 1/4 c. green pepper
- 1/2 c. onion, chopped
- 1 c. rice (instant)
- 2 Tbsp. instant chicken bouillon granules
- 1 pkg. frozen peas
- 1 can tomatoes
- 1 c. water
- Brown chicken in small amount of oil and margarine; remove from pan.
- Add celery, onion and green pepper to drippings and saute.
- Add rice and saute, stirring constantly until slightly translucent.
- Add can of tomatoes that have been blenderized for just a few seconds, water and chicken bouillon.
- Arrange chicken down into rice, cover and bake at 350u0b0 until rice is almost done. Spread defrosted peas over casserole and continue to cook for at least 10 minutes.
- (I prefer to use boneless chicken breasts or tenders.)
