Old-Fashioned Lemon Bars
- 2 1/4 c. flour, divided
- 1/2 c. 10x (confectioners) sugar
- 1 c. (2 sticks) butter
- 4 eggs
- 1 1/2 c. sugar
- 1/3 c. lemon juice
- 1 Tbsp. lemon peel, grated
- 1 tsp. baking powder
- 1/2 tsp. salt
- Preheat oven to 350u0b0.
- Lightly grease a 13 x 9-inch pan.
- In a large bowl, combine 2 cups of the flour with 10x sugar.
- Cut in butter until crumbly.
- Pat evenly in pan.
- Bake 15 to 20 minutes or until lightly browned.
- In a large bowl, beat eggs until foamy. Add remaining ingredients.
- Pour over baked crust.
- Bake for 25 to 30 minutes longer or until lemon topping is set and lightly browned.
- Cool completely.
- Dust with 10x sugar.
- Cut in 1 x 2-inch bars.
- Store in refrigerator.
- Makes 48 bars.
