Baked Orange Roughy With Cheese And Mushrooms
- 1 Tbsp. margarine
- 4 large scallions, sliced
- 15 oz. can mushrooms, drained
- 1 1/4 lb. orange roughy fillets
- 2 Tbsp. lemon juice
- 1/2 tsp. dried marjoram
- 4 slices reduced-fat cheese, cut in 1/2-inch strips
- 2 Tbsp. bread crumbs
- 1 tsp. black pepper
- 1/4 c. dry white wine
- Preheat oven to 400u0b0.
- Grease a shallow 2 quart baking dish with margarine.
- Evenly scatter the scallions and mushrooms over the bottom of the baking dish.
- Place the fish fillets on top in a single layer (overlap or tuck under the thin ends of the fillets). Mix the wine and lemon juice together and pour over the fish. Sprinkle with the marjoram and black pepper.
- Evenly distribute the cheese strips over the fillets.
- Crumble a large piece of waxed paper and wet it.
- Shake off excess water and place the paper loosely across fish.
- Bake for 7 minutes.
- Remove from oven, take off waxed paper.
- Sprinkle fish with bread crumbs.
- Bake for another 7 to 9 minutes.
- Stick fish under broiler just long enough to brown, about 1 minute.
