Chicken Silver(A Tasty Newspaper Recipe)
- 2 tsp. minced fresh ginger root
- 4 garlic cloves, minced
- 1/4 c. mango chutney or apricot preserves
- 2 tsp. cider vinegar
- 4 tsp. melted butter
- 1/4 tsp. crushed hot red pepper flakes
- 1 c. thinly sliced leeks
- 4 boneless, skinless chicken breast halves
- 1 tsp. salt or more to taste
- 1 to 2 tsp. freshly ground black pepper
- 1 red bell pepper, seeded and slivered
- 16 snow peas, slivered
- Preheat oven to 500u0b0.
- Cut four sheets of foil, each 1 foot square.
- Stir together the ginger, garlic, mango chutney, vinegar, butter and red pepper flakes.
- Divide the leeks equally, placing 1 portion in the center of each piece of foil.
- Season both sides of chicken with salt and pepper to taste; place on top of leeks. Spread 1/4 of the chutney mixture on each chicken breast.
- Sprinkle with the slivered peppers and snow peas; season with salt and pepper.
