Chris' Funky Four Cheese Lasagna
- 1/2 lb. lasagna noodles
- 1 1/2 c. Ricotta cheese
- 1/4 c. Parmesan cheese
- 1 egg, beaten
- salt and pepper to taste
- 2 c. fresh tomato sauce
- 1/2 lb. sliced Mozzarella
- 1/2 lb. thin sliced Provolone
- grated Parmesan (for topping)
- Bring large pot of water to a boil, lightly salted.
- Cook noodles al dente.
- Make sure they are separated in water.
- Mix Ricotta, Parmesan, egg, salt and pepper.
- Lightly oil a 13 x 9 x 2-inch baking pan and spread 1/2 cup tomato sauce on bottom.
- Lay 3 noodles lengthwise.
- Spread 1/3 Ricotta mixture on top first layer. Top with 1/3 Mozzarella and 1/3 of the Provolone.
- Spread another 1/3 of Ricotta on top and another layer of Mozzarella and Provolone.
- Spread remaining Ricotta on noodles and sauce over the cheese.
- Bake in preheated 375u0b0 oven for 40 minutes until bubbly. Allow lasagna to cool and set before cutting.
