Great Chilled Gazpacho
- 2 1/2 lbs really ripe tomatoes, roughly chopped
- 1 medium red pepper, seeded and roughly chopped
- 1 medium green pepper, seeded and roughly chopped
- 1/2 small red onion, chopped
- 1 garlic clove, chopped
- 1 red chile, deseeded and finely chopped (optional)
- 1/2 cucumber, seeded and roughly chopped
- 1 thick slice sourdough bread
- Salt and pepper
- 1-2 tbsp aged sherry vinegar
- 1 tbsp chopped mint or parsley, to garnish
- 1 tsp olive oil
- Place first 8 ingredients in food processor, reserving a handful of cucumber to garnish. Blend until smooth. Season to taste. Stir in the sherry vinegar. Chill for at least 1 hour.
- Pour into bowls, and garnish with reserved cucumber and mint or parsley. Drizzle 1/4 tsp olive oil over each bowl of gazpacho, and serve immediately.
