Great Chilled Gazpacho

  1. Place first 8 ingredients in food processor, reserving a handful of cucumber to garnish. Blend until smooth. Season to taste. Stir in the sherry vinegar. Chill for at least 1 hour.
  2. Pour into bowls, and garnish with reserved cucumber and mint or parsley. Drizzle 1/4 tsp olive oil over each bowl of gazpacho, and serve immediately.
