Meatball Stew
- 1 lb. ground chuck
- 4 potatoes
- 5 carrots
- 1 package dry onion soup mix
- flour
- 1 lb. ground beef
- 1/2 Cup diced onion
- 1 clove garlic, diced
- salt and pepper to taste
- 1 (10 oz.) package frozen, chopped spinach
- 1 lb. box of small or medium shells
- 1/2 Cup shredded cheddar cheese
- 1/2 Cup grated parmesan cheese
- 1/2 cup flavored bread crumbs
- 2 eggs, well beaten
- 1/4 cup vegetable oil
- salt and pepper to taste
- After mixing cheese mixture well, add remaining ingredients and mix well.
- Spoon some spaghetti sauce in bottom of 9 X 13 pan. Spoon ingredients over sauce and spread evenly.
- Cover with more sauce.
- Bake at 350 for 30 minutes or until center is heated thru. Use extra sauce at table.
- Can be divided and frozen.
