Pumpkin Cake
- 3 cups sugar
- 1 cup shortening
- 3 large eggs
- 2 cups mashed cooked pumpkin
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
- Beat sugar and shortening at medium speed with an electric mixer until creamy. Add eggs and pumpkin, beating until blended. Combine flour and next 8 ingredients; gradually add to pumpkin mixture, beating until blended. Stir in pecans. Pour into a greased and floured 10-inch tube pan.
- Bake at 350u0b0 for 10 minutes. Reduce temperature to 300u0b0; bake 1 hour and 20 minutes.
