Sliced Beef In Onion Sauce
- 1 lb. chuck, shoulder or round, cut in 1/4-inch slices
- 3 Tbsp. shortening
- 1/2 lb. large onions, cut into thick slices
- 1 1/2 tsp. salt
- dash of pepper
- 1 c. water
- 2 Tbsp. flour
- 1 tsp. sugar
- Season meat with salt and pepper.
- Brown on both sides in melted shortening.
- Add 1/4 cup of water and cover tightly. Simmer gently 1 to 1 1/2 hours, or until meat is tender.
- Add remaining water, a 1/4 cup at a time to keep pan from drying out. Push meat to one side of pan and carefully place onions in the juice.
- Cover.
- Simmer 1/2 hour or longer until onions are transparent and tender.
- Transfer meat and onions to hot platter and cover.
- Stir combined sugar and flour into juice, adding more water if desired.
- Heat to boiling and pour over meat and onions. Serve at once.
- Yields 4 servings.
