Sliced Beef In Onion Sauce

  1. Season meat with salt and pepper.
  2. Brown on both sides in melted shortening.
  3. Add 1/4 cup of water and cover tightly. Simmer gently 1 to 1 1/2 hours, or until meat is tender.
  4. Add remaining water, a 1/4 cup at a time to keep pan from drying out. Push meat to one side of pan and carefully place onions in the juice.
  5. Cover.
  6. Simmer 1/2 hour or longer until onions are transparent and tender.
  7. Transfer meat and onions to hot platter and cover.
  8. Stir combined sugar and flour into juice, adding more water if desired.
  9. Heat to boiling and pour over meat and onions. Serve at once.
  10. Yields 4 servings.
