A Bowl Of Texas Red
- 1 boneless chuck roast, about 2 lbs., cut into cubes
- 1 c. Masa Harina (corn flour)
- 3 Tbsp. ground chili powder
- 4 Tbsp. vegetable oil
- 1 lb. ground pork
- 1 c. chopped green bell pepper
- 1 chopped onion
- 1 can chicken broth (14.5 oz.)
- 1 can beef broth (14.5 oz.)
- 1 can diced green chilies (4 oz.)
- 2 Tbsp. jalapeno (optional)
- 1 can tomatoes with juice (28 oz.)
- 1 tsp. salt
- 1 Tbsp. ground cumin
- 1 tsp. garlic powder
- 1 Tbsp. paprika
- 1/4 tsp. cayenne pepper, to taste
- 1/4 c. chopped fresh cilantro
- In a large bowl, combine the Masa Harina with 1 Tbsp. of the ground chili. Dredge the cubed beef in this mixture.
