Crispy Oat Cookies
- 1 c. oleo, softened
- 1 c. sugar
- 1 c. brown sugar
- 1 egg
- 1 c. oil
- 1 c. crushed cornflakes
- 3 1/2 c. flour
- 1 tsp. soda
- 1/2 tsp. salt
- 1 c. regular oats (not cooked)
- 1/2 c. coconut
- 1 tsp. vanilla
- 1/2 c. chopped nuts
- Cream oleo; gradually add sugars, beating well at medium speed with electric mixer.
- Add egg and beat well.
- Add oil and vanilla; mix well.
- Combine flour, soda and salt; add to creamed mixture and mix well.
- Stir in oats and remaining ingredients.
- Shape into 1-inch balls and place on ungreased cookie sheet; flatten each ball with a fork.
- Bake at 325u0b0 for 15 minutes; cool slightly and remove from cookie sheet and cool.
- Yields 10 dozen.
