Chicken King Ranch
- 1 large fryer, stewed and boned
- 1 doz. soft tortillas, broken into nickel size
- 1 large onion, chopped
- 2 c. grated Cheddar cheese
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 small can Ro-Tel tomatoes and chilies
- 1 c. chicken broth
- Combine chicken soup, mushroom soup, tomatoes (use only 1/2 can if you don't like real hot food) and chicken broth for sauce. Grease a large flat casserole (13 x 9-inch or similar size).
- Fix in casserole a layer of chicken, layer of tortillas, onion, then cheese and sauce.
- Then repeat your layers again, but this time end up with cheese.
- Cover the dish with foil for the first 30 minutes while baking at 350u0b0.
- Uncover for the last 30 minutes.
