Grilled Oysters With Garlic Butter
- 1 cup (8 oz.) salted butter, softened
- 2 tablespoons finely chopped fresh flat-leaf parsley
- 4 teaspoons finely grated fresh horseradish
- 2 teaspoons finely chopped garlic (2 garlic cloves)
- 2 teaspoons Worcestershire sauce
- 1 teaspoon lemon zest (from 1 lemon)
- 1/2 teaspoon kosher salt
- 1/2 teaspoon paprika
- 1/2 teaspoon hot sauce
- 2 dozen oysters on the half shell (3- to 4-inch diameter)
- Preheat grill to high (450u0b0F to 500u0b0F). Stir together butter, parsley, horseradish, garlic, Worcestershire, zest, salt, paprika, and hot sauce in a bowl until well blended. Place about 2 teaspoons butter mixture in each oyster. Arrange oysters in a single layer on oiled grates, keeping oysters as level as possible. Grill, uncovered, until butter is completely melted and just starting to bubble, about 7 minutes.
- Carefully remove oysters from grill, and serve immediately.
