No-Weep Perfect Meringue(For Cream Pies)
- 3 egg whites (room temperature)
- 1/8 tsp. cream of tartar
- 6 Tbsp. white sugar
- 1 Tbsp. cornstarch
- few grains of salt
- 1/2 c. water
- Put egg whites and cream of tartar in small size mixer bowl. Combine white sugar, cornstarch and salt; mix well.
- Add water and put in microwave bowl.
- Microwave on High until mixture becomes clear, then add enough mini marshmallows just to cover the mix. Cook just long enough to let the marshmallows puff up; remove and stir the mixture well.
- It will be hot.
- Beat egg whites until very foamy, not dry, and add the cooked mixture, 1 tablespoon at a time, beating on high power.
- Add 1/2 teaspoon vanilla last.
- Beat 2 minutes longer.
- Spread over pie filling and brown at 400u0b0 for 5 to 6 minutes or until it browns sufficiently to your liking.
