Fresh Pepper Relish

  1. Coat a nonaluminum saucepan with cooking spray.
  2. Place over medium-high heat until hot.
  3. Add carrot and next 5 ingredients; saute until crisp-tender.
  4. Stir in vinegar, sugar and salt.
  5. Bring to a boil.
  6. Reduce heat and let simmer 5 minutes, stirring occasionally.
  7. Let cool to room temperature, cover and chill thoroughly.
  8. Serve with pork or poultry.
  9. Yields 2 cups (11 calories and 8% fat per tablespoon).
  10. Protein 0.2, fat 0.1 (saturated fat 0), carbohydrate 2.8, fiber 0.3, cholesterol 0, sodium 20.
