Fresh Pepper Relish
- vegetable cooking spray
- 1 c. shredded carrot
- 3/4 c. chopped onion
- 1/2 c. chopped green pepper
- 1/2 c. chopped sweet red pepper
- 1 banana pepper, seeded and chopped
- 3 Tbsp. raisins
- 3 Tbsp. cider vinegar
- 2 Tbsp. sugar
- 1/4 tsp. salt
- Coat a nonaluminum saucepan with cooking spray.
- Place over medium-high heat until hot.
- Add carrot and next 5 ingredients; saute until crisp-tender.
- Stir in vinegar, sugar and salt.
- Bring to a boil.
- Reduce heat and let simmer 5 minutes, stirring occasionally.
- Let cool to room temperature, cover and chill thoroughly.
- Serve with pork or poultry.
- Yields 2 cups (11 calories and 8% fat per tablespoon).
