Crabmeat Casserole
- 5 Tbsp. butter
- 3 Tbsp. flour
- 2 c. milk
- 2 Tbsp. minced onion
- 1/2 tsp. celery salt
- 1 Tbsp. minced parsley
- 1 Tbsp. minced green pepper
- 1 pimento, minced
- 2 Tbsp. sherry
- 1 egg, beaten
- dash of hot sauce
- 1 tsp. salt
- dash of black pepper
- 1 lb. fresh crabmeat
- bread crumbs
- 1 Tbsp. butter
- Make white sauce of butter, flour and milk; then add next six ingredients.
- Remove from heat.
- Add sherry.
- Add little hot sauce to egg; then add egg to rest of sauce.
- Add hot sauce, salt, pepper and crabmeat.
- Put in 1 1/2-quart casserole; sprinkle top with bread crumbs, mixed with 1 tablespoon melted butter.
- Bake in 350u0b0 oven for 15 to 20 minutes.
- Serves 6 to 8.
