Orange Sweet Potato Cups
- 4 1/2 cups peeled, cubed sweet potato
- 3 tablespoons margarine
- 1/2 cup unsweetened orange juice
- 1/4 cup whipping cream
- 1 tablespoon brown sugar
- 1 tablespoon Triple Sec or other orange-flavored liqueur
- 1/4 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/4 cup firmly packed brown sugar
- 1 1/2 tablespoons all-purpose flour
- 1 1/2 tablespoons margarine, softened
- 1/4 cup finely chopped pecans
- Cook sweet potato in boiling water to cover 15 minutes or until tender; drain. Combine sweet potato and 3 tablespoons margarine in a large bowl; mash. Add orange juice and next 5 ingredients; stir well. Spoon mixture into 4 lightly greased 8-ounce ramekins; set aside.
- Combine 1/4 cup brown sugar, flour, 1 1/2 tablespoons margarine, and chopped pecans; sprinkle evenly over sweet potato mixture in ramekins. Bake, uncovered, at 350u0b0 for 20 minutes or until bubbly.
