Apricot Greens And Swiss With Ginger Vinaigrette
- 2 tablespoons sugar
- 1/4 cup dry white wine
- 2 tablespoons white balsamic vinegar
- 1 tablespoon vegetable oil
- 1/2 teaspoon grated peeled fresh ginger
- 1/4 teaspoon crushed red pepper
- 1/4 teaspoon salt
- 1 (5-ounce) package gourmet salad greens
- 4 ounces reduced-fat, reduced-sodium Swiss cheese, cut into 1/2-inch cubes
- 1/2 cup thinly sliced red bell pepper
- 1/2 cup thinly sliced green onions
- 1/2 cup thinly sliced dried apricots
- Combine first 7 ingredients in a small bowl; stir well with a whisk.
- Combine salad greens and next 4 ingredients in a bowl. Pour vinaigrette over salad; toss gently to coat.
